When and why did you start the business?

Our family has been raising bison since 1987.  We have always given our bison meat to friends and family, selling a little bit here and there, and finally decided to share our premium bison meat with the world in 2020.

BBQ can have different meanings to different people; what does it mean to you?

Spending time outdoors with friends and family while grilling and smoking the bison meat we have raised and cared for from birth to harvest!

From your experience, what tips could you offer?

Bison meat is very lean and already has a very bold flavor, so it needs very little seasoning.  Honestly, the only thing our family uses is salt and pepper!  It likes to be cooked hot and fast for a quick sear, or low and slow… the secret?  Just don’t overcook it!  The biggest mistake people make when cooking bison is they cook  it like they would beef.  Beef has much more fat and is much more forgiving than bison.  It’s not difficult to cook bison, it just needs a little more attention.

What would you say your best seller is and why?

We truly cannot say that any of our bison meat sells any more or less than the others.  My personal favorite is our bison tenderloins and our bison chuck roasts.  Amazing flavor and tenderness all the way around. 

What are your future goals?  

Our family’s goal is to share our bison meat with as many as possible while maintaining the integrity of our ranching roots.  Working hard, giving the best care to our bison, continuing our holistic and regenerative ranching practices, and bringing delicious and healthy bison meat straight from our ranches to our customer’s doors.  We raise our bison from birth to harvest, and we are proud to say that we are one of the few that can do exactly this in the bison industry.  Much of the bison meat found in stores is now being fed in feedlots where there are thousands of bison just as beef cattle are today.  This is now happening along with bison being slaughtered in big bison packing plants similar to the Tyson’s and John Morrels of the world.  At Heritage Bison Ranches you get full transparency.  Our bison are raised on 2,000 acres of native prairie grasses with no antibiotics or growth hormones and processed at small, local, State and USDA certified lockers we know and trust.  At Heritage Bison Ranches, you know where your food comes from.
