INGREDIENTS

  •  6 Bone in and skin on chicken thighs
  •  6 Strips of bacon 
  • 6 Thin pads of butter 
  • Favorite rub of choice 
  • 1/4 Cup of your best BBQ sauce

Bacon Wrapped Chicken Muffins

DIRECTIONS

  1. Place a pad of butter in the bottom of a muffin tin and line the outside with a srtip of bacon.
  2. De-bone a chicken thigh and remove the skin.
  3. Season the chicken with you favorite rub and place it in the tin.
  4. Remove the fat from the back of the chicken skin and place it on top.
  5. Using a butter knife, stuff the skin between the bacon and the chicken.
  6. Top of with your favorite rub and smoke at 225°for 1 to 1.5 hrs.
  7. Remove from the tin once at an internal temperature of 160° and place them on a rack in the BBQ.
  8. Cover in BBQ sauce and cook for an additional 20 minutes at 225° till internal temperature is 180°
