INGREDIENTS

  • 4 Boneless Skinless Chicken Breasts
  • 8-10 Strips of Regular Cut Bacon
  • 4 Jalapeños
  • 4 oz Cream Cheese (softened)
  • 4 oz Cheddar Cheese (shredded)
  • 3 Tbsp Sweet BBQ rub
  • 1 Tbsp Savory BBQ Rub
  • 1/2 C Sweet & Spicy BBQ Sauce

Jalapeno Popper Chicken

DIRECTIONS

  1. Mix cream cheese, cheddar cheese, and 1 Tbsp sweet rub
  2. Slice jalapeños in half (lengthwise), and clean out the insides
  3. Fill jalapeños with cream cheese mixture and put back together into 4 whole peppers, filled with cheese
  4. Butterfly chicken breasts and season with savory BBQ rub on inside
  5. Place 1 stuffed pepper in middle of each breast and roll up
  6. Wrap at least 2 strips of bacon around each stuffed chicken breast.  You can use toothpicks to help hold them together, but remember to remove before serving.
  7. Place wrapped breasts on a wire rack for smoking, and season all sides with sweet BBQ rub.
  8. Place on smoker at 250-275 and smoke for 60 min.
  9. Slather chicken with BBQ sauce and smoke additional 30 min.
  10. Once temps hit 165 internal, remove chicken, let rest 2-3 minutes, slice in half and serve.
