INGREDIENTS
6-8 Pork Chops cut into 1 inch cubes
1/3 cup Olive Oil
1/4 cup red wine vinegar
1 tablespoon of salt
1 tablespoon of pepper
5 minced garlic cloves
1 teaspoon each of dried marjoram, oregano, thyme, rosemary, basil and sage
Juice of half a lemon

DIRECTIONS
Set up your grill for a two zone fire. Hot coals on one side, and no coals on the opposite side. Let the grill come up to temperature while you prepare your meat.
Combine all ingredients in a bowl and mix together thoroughly. You can marinade these pork chunks ahead of time, or you can do it 10 minutes before grilling!
Prepare the pork chunks on 4-6 skewers. About 10 cubes of pork per skewer.
Grill the pork skewers until a nice char forms on the outside. Transfer them to the cool side of the grill as the char begins to develop. Cook until internal temperature of 140 and transfer to cool side to come up to desired temperature.
Once the pork reaches an internal of 150-160 it is time to pull them from the grill!
